• A forged German set had the best edge and balance of the two, but it is hand-wash only, which is a dealbreaker for anyone who refuses to wash knives by hand.
• Handle fatigue was real on the budget set after twenty minutes of continuous prep — fine for weeknight cooking, tiring for marathon sessions.

The verdict

For most kitchens, a 15-piece stainless set with a built-in sharpener is the one that earns its counter space — sharp out of the box, easy to keep sharp, and tough enough for real life. If you cook for hours at a time and don't mind hand-washing, step up to a forged full-tang set for the better edge.
